Executive Chef

An opportunity has risen for a suitably qualified and experienced Chef to take up the position of Executive Chef tenable at one of the Sunbird Hotels. Reporting to the General Manager, the incumbent will have the overall responsibility of overseeing all Food Production processes at the hotel.

Key performance areas will include, but not limited to:

  • Ensuring that all menus are constantly updated, paying special attention to seasonal availability
  • Ensuring that all menus are calculated correctly to obtain maximum gross profit
  • Ensuring that all kitchen staff members are constantly trained to do good portion control and pleasing presentation of all dishes
  • Checking and ensuring that all documents for suppliers of commodities are duly signed and sent to the appropriate Accounts department immediately for processing.
  • Preparing departmental budgets in line with the strategic business plan
  • Carrying out periodic recipe research with a view of developing new dishes
  • Reviewing recipes and food presentations periodically
  • Ensuring that food items purchased are of quality, right quantity and correct price
  • Monitoring the preparation of food from time to time
  • Conducting daily morning briefings with supervisors
  • Ensuring that food is served as per required time
  • Getting customer feedback on quality of food
  • Ensuring that physical stock-takes are performed periodically
  • Ensuring through inspection, that there are no equipment break downs
  • Ensuring that kitchen is clean, hygienic and safe at all times
  • Conducting training and identifying training gaps

Desired Qualifications, Experience and attributes:

  • Diploma in Food Production or Culinary Arts from any institution recognized by NCHE; those with Bachelor’s degree will have an added advantage
  • A full Malawi School Certificate of Education
  • A minimum of 5 years experience in Food Production acquired in a 4-5 Star property
  • Must be a team player
  • Excellent communication and leadership skills
  • Good interpersonal and customer care skills
