UHL manages the Bingu International Convention Centre (BICC), a five-star hotel with 130 rooms and the Presidential Village comprising 14 world-class villas offering luxury accommodation and office rental facilities.

UHL invites applications from suitably qualified and experienced professionals for the position of Food and Beverages Manager.

Role Overview

As the Food & Beverage Manager reporting to the General Manager, you will provide both strategic direction and hands-on operational management of all F&B functions. You will oversee every dining outlet and catering operation including restaurants, bars, in-room dining, and conference/event catering – ensuring they meet international five-star standards.

The role emphasizes a business-oriented approach: you will tailor F&B offerings to corporate and leisure guests alike, particularly focusing on conference and executive dining for our business clientele. You will be a results-driven, proactive leader who drives profitability and quality, with deep expertise in luxury hospitality operations. Your goal is to deliver exceptional guest experiences while maintaining strict cost controls and service consistency across all venues.

Key Responsibilities:

  • Lead All F&B Operations: Provide strategic oversight and day-to-day management for the hotel’s entire F&B department. This includes restaurants, casual venues, bars, room service, private dining, and banquet/conference catering. Ensure each outlet operates smoothly, on schedule, and in line with global best practices.
  • Guest Service Excellence: Implement and maintain internationally accepted five-star service standards. Continuously monitor guest feedback and service metrics to uphold the hotel’s reputation for high-quality dining experiences. Foster a culture of exceptional service and responsiveness to guest needs.
  • Business-Focused Offerings: Align the F&B program with the hotel’s business-focused brand.
    Design menus and service concepts that appeal to corporate clients and conference delegates (e.g., business lunches, executive dining, networking events). Work closely with the Sales and Events teams to tailor F&B services for meetings and corporate functions.
  • Financial Performance: Own the F&B profit-and-loss performance. Develop and manage annual budgets, forecasts, and financial plans for all F&B outlets. Exercise rigorous cost control by monitoring inventory, procurement, and waste. Set pricing and promotion strategies to maximize revenue, ensuring the department meets or exceeds its profitability targets.
  • Operational Efficiency: Establish and enforce efficient operational procedures. Oversee scheduling, staffing levels, and resource allocation to optimize productivity. Utilize technology and systems (e.g., POS, inventory management) to streamline operations and reporting. Continuously seek ways to improve processes, reduce expenses, and eliminate inefficiencies.
  • Quality and Compliance: Maintain uncompromising standards for food quality, presentation, and hygiene. Ensure full compliance with all health, safety, and licensing regulations. Work with chefs and supervisors to uphold consistency in culinary execution and service delivery across all outlets.
  • Team Leadership: Build and lead a high-performing F&B team. Recruit, train, mentor, and evaluate staff to ensure they deliver professional and friendly service. Foster clear communication, teamwork, and an ownership mindset among employees. Conduct regular performance reviews and set clear performance targets (KPls) related to service quality and operational goals.
  • Stakeholder Collaboration: Act as a key member of the hotel’s leadership team. Coordinate with the General Manager and department heads to align F&B initiatives with overall hotel strategy. Collaborate with Marketing to promote F&B events and promotions, especially those targeting business and group markets. Maintain strong relationships with suppliers and negotiate contracts to source high-quality ingredients at optimal cost.

Qualifications & Experience

  • A Bachelor’s Degree in Hotel Management, Hospitality, Food & Beverage Management or a related field.
  • Extensive experience (typically 5+ years) in managing food and beverage operations in a five-star or upscale international hotel. Experience in an independent or business-oriented property is a plus.
  • Proven ability to manage P&L, budgets, and financial metrics. Demonstrated success in driving revenue growth and achieving cost-saving goals without compromising quality.
  • Able to translate the hotel’s business-focused brand positioning into F&B programs and offerings that appeal to corporate guests, event planners, and leisure travellers alike.
