FOOD AND BEVERAGE CLERK
Reporting to: Food and Beverage Controller

Major Duties and Responsibilities

  • Assisting in Preparing and analyzing food & beverage costs every month and recommending alternatives to improve costs.
  • Assisting in the monthly inventory count
  • Assisting in establishing and maintaining a database for inventory stock including up-to-date pricing.
  • Ensuring proper storage and issuance of all items.
  • Establishing and maintaining a cost allocation transfer system
  • Reviewing the daily intake of products from all outlets and ensuring accurate pricing and quantity of goods received
  • Assisting in controlling the stores by ensuring the accuracy of inventory and stock control and the pricing of goods
  • Helping in managing cost reporting every week
  • Attending finance & operational meetings, as required
  • Assisting in maintaining good communication and working relationships with all sections
  • Acting by food hygiene, fire, health, and safety regulations and follow the correct procedures when required
  • Assisting in producing the monthly food and beverage reports. Completing 2 interim stock takes in each outlet, 1 in banqueting dispense, and report on findings.
  • Completing regular spot checks of the cellar.
  • Matching all invoices, credit notes with delivery notes, and goods returned notes to orders and preparing invoices for data input.
  • Taking regular hydrometer tests
  • Assisting in ensuring all staff are tested for compliance with the Weights and Measures Act.
    Checking voids daily and report any discrepancies.
  • Assisting in analyzing the outside catering (events/banqueting) cash bars consumptions against revenue and notifying management of discrepancies.
  • Checking the post-mix apparatus every month.

Job Prerequisites/Qualifications

  • Diploma in Hospitality and Tourism Management
  • Understanding of food service and production cycles/process
  • Previous experience in a high volume cost control functions within a busy environment
  • Computer literacy in MS Office
  • Strong organizational skills
  • Ability to develop strong working relationships with internal and external customers
